- Cortar la calabaza en trozos. Limpiar y cortar la zanahoria. Reservar


- Picar muy pequeños la cebolla, el puerro y el jengibre. Poner a pochar en una cazuela con un poquito de aceite a fuego suave


- Cuando empiezan a dorar añadir la calabaza y la zanahoria. Rehogar 2-3 minutos y añadir el comino, el curry, sal y pimienta negra. Mezclar bien y dejar otros 2-3 minutos


- Subir el fuego y cubrir con caldo de verduras. Dejar cocer hasta que la calabaza y la zanahoria estén blandas. Pasar por la batidora, batir bien y volver a poner en la cazuela. Calentar a fuego suave unos minutos


- Cortar el pan en cuadraditos. Freír en aceite caliente, pasar a un plato con papel absorbente y reservar



- Picar muy fino el perejil fresco. Reservar

- Poner la crema caliente en dos bowls. Poner el perejil picado


- En un bowl poner unos trocitos de aguacate y en el otro unos taquitos de jamón serrano


- Añadir a ambos unos trocitos de pan frito y un chorrito de Aceite de Oliva Virgen Extra (yo he usado Aceite de La Laguna de Fuente de Piedra, variedad Vidueña envero)



- Servir caliente. Buen provecho!!!!
