- Picar la cebolla y los dientes de ajo. Colocar la cebolla junto a una pizca de sal en una cacerolita con aceite de oliva y cocinar hasta dorar. Agregar los ajos y las aceitunas (ambos picados).



- Por 煤ltimo agregamos la pulpa de la berenjena y cocinamos por 3 minutos, revolviendo para evitar que se pegue en el fondo de la cacerolita. Una vez lista, apagamos el fuego y dejamos enfriar.


- Por 煤ltimo mixeamos hasta llegar a la consistencia deseada. Pasamos a un cuenco y terminamos de salpimentar y decorar con el perejil fresco picado y un poquito de aji molido por encima.


- Tips: ideal para untar galletas saladas, tostadas crujientes, nachos de ma铆z, carnes.. O como en mi caso en un pletzalej.
